Starting a new job as a long term substitute teacher at a school that is an hour away from home could have posed some difficulty when planning this week's menu for our family. Instead of trying a bunch of new recipes this week, I decided to stick with some basic meals that I knew I could cook once and would leave me with leftovers on hand.
I didn't have a chance to plan a full month's worth of meals this time like I prefer to do, but this will get us started. And I still don't know how this substitute position is going to go, so I opted for one week at a time this month. :) Just to play it safe.
Eggs & Toast
Oatmeal with Fruit, or Brown Sugar
Peanut Butter & Jelly Sandwiches
Chicken & Dumplings
French Onion Soup (I made this last night and it was so yummy! See the picture at the top.)
Roast Beef Sandwiches
